A long time friend happened to stop by my house this past Sunday and it was good to see her again, no matter how short the time. We quickly reminisced about (her) grandma making us potato pancakes for dinner one time when I went to visit her (prior to meeting my husband) and I joked about how my husband just.can.not.do “breakfast for dinner”. He just doesn’t get it. 🙂 This conversation lead into her
scolding questioning when the next recipe was going to be posted on Behind the Designs blog. So, Terri (a.k.a. chick!) this recipe is for you!
Indeed it was my plan to try and post recipes weekly. But, I always set high goals for myself and then life just gets in the way. Below is one recipe I’ve been wanting to share for awhile now. It’s a quick and easy family dinner that you can make and eat in less than an hour.
This recipe is for Baked Penne Past and Smoked Sausage. You can grab the full recipe below. I did make some recipe substitutions but it still came out wonderful and tasty!
Prep was pretty easy with the little one helping. You simply cut the sausage into 1/4″ slices, brown in a skillet and drain well. Combine the soup and milk in a casserole dish. Add to that the penne pasta (either cooked or uncooked), 1/2 the amount of mozzarella cheese and onions and the full amount of peas (or vegetable of choice).
Bake for 30 minutes. Top with remaining cheese and onions. Bake 3 minutes until golden and voila! Dinner is served.
