By day, I manage numbers, ledgers and budgets. By night, I manage family and I try to get in a little jewelry designing (if I’m not too wiped out). But, come cooler months, I love to bake. Yes, Behind the Designs, I also love cooking and baking!
Clearly, with weekdays/weeknights so pressed for time, I plan to do most of my baking and more involved meals on the weekend. With only three of us to feed, I tend to freeze extras and that allows for pre-planned week night meals that are quick and easy! So, without fail, the first weekend of September I got the baking bug.
The plan: Zucchini Bread
My go-to-can’t-live-without-kitchen-resource: Betty Crocker’s cookbook 1988 (this cookbook may be 23 years old and show its’ age but that just goes to show how fabulous this cookbook is!).
My husbands’ job: Get me a few ingredients from Wegmans and while there, grab me a mocha latte. 🙂
With latte in hand, let’s get started:
Step 1: Shred zucchini
Step 3: Mix all ingredients and grease the bottom of loaf pans
Steps 4 & 5: Pour into loaf pans and put in preheated oven
Notice I am using a completely different loaf pan than the recipe calls for, because that’s how I roll…I like to challenge my baking skills.
